I love bread… there I said it, I just love it and I am not ashamed to shout it from my back garden (my neighbors are close - everyone will hear me)!! So, let me tell you how excited I was to find a recipe that was super easy and fool-proof. Yes, I said it, FOOL PROOF! I have made this loaf with plain white flower and also whole wheat flour and they always come out great. The whole wheat is a bit more dense, but the chew is great and you will be so thrilled. Ready for it, here is the super simple recipe:
Mix all the dry ingredients, then add the water and mix. It will combine to form a dough that is called “shaggy” or what I consider to be drier that you would want. Don’t worry. Just cover it with plastic, set in a spot in your kitchen and leave it for at least 12 hours. It will start to activate and get bubbly and wonderful.
Next day - turn your oven on to 425 degrees F with a casserole dish in it… and as it preheats, turn the dough out on a floured surface and fold it over a couple times. Then plop it into a new bowl lines with parchment (crinkle it up a bit first so it stays in the bowl) and cover the dough with a kitchen rag… let it rise for about 30 minutes. Lift the dough with the parchment into the casserole (dutch oven) and cover, make a slit on the top with scissors or a sharp knife to let the steam out. Bake for 30 minutes then, take out of the oven, get rid of the parchment and return the bread to the casserole to bake uncovered for another 10-30 minutes, depending on how you want your crust to be.
Remove from oven and let it cool on a wire rack. Voila! You have bread! Enjoy.
